Yummy Taiwanese beef noodle soup

Taiwanese beef noodle soup is one of the most famous meals in Taiwan. This is also one of the first traditional meal that I tasted. And it’s absolutely delicious.

So I tried to understand why it was so famous, and after a few researches on the Internet, I found some really interesting information about it.


At the beginning, Taiwanese people didn’t want to eat beef because they were considered as precious products tools. Indeed, they were really useful for the farmers so they were holy. But, after 1949, roughly two million Mainland Chinese moved to Taiwan during this time because of the civil war, and they began to eat some beef.

According to history, the first family who cooked this meal was in Kaohsiung’s Gangshan area, and it was a military family. Inside the soup there was soy sauce, braised beef and noodles. This is the most common soup in Taiwan.


Nowadays a lot of other cooking recipes exist, with different sauce (spicy, tomato, garlic…), with or without vegetables… but the most important ingredients are always the same : braised beef, noodles and broth.


Moreover, between the different Portuguese, Japanese and Chinese influences, we can say that Taiwanese cuisine is reinvented every day. Creativity is the basic ingredient for the Taiwanese cooking.

This constant evolution of Taiwanese cuisine creates some problems for most of traditional people, because original recipes are lost forever. Indeed, for the Taiwanese, the traditions are really important and must be preserved by the young generation.


To conclude, this famous soup is not only an excellent dish to enjoy, it is a must for a better understanding of Taiwanese culture and better integration. It has a story and you will appreciate it even more after you learn about it.
